Sausage Plait Recipe

We recently attended a Christmas Carol and Supper night in a barn in our village. Everyone mucked in and brought a plate of food and a bottle of wine. The star of the night for me was the sausage plait. I wanted to feature a Christmas recipe for this blog and this was my inspiration! This recipe is fairly straight forward and believe me it is really tasty, especially served hot. I have family at our house for New Year’s Eve, so I’m going to cook this, as its a great addition to any party food spread.
Ingredients :
1 tsp olive oil
1 red onion – chopped
50g of fresh white breadcrumbs
10 sage leaves finely chopped
400g of good quality sausages
250g puff pastry
salt & pepper
Method :
1. Fry the chopped onion in the oil until softened. Transfer to a bowl, add the breadcrumbs and sage, mix well, season and leave to cool.
2. Heat the oven to 180C/Gas 6. Mix the sausage meat with the breadcrumb/ onion and sage mix. Roll out the pastry to a 35cm by 30cm rectangle and place on a baking tray lined with baking parchment.
3. Form the meat mixture into a long sausage shape and put in the centre of the pastry, leaving 2cm at each end. Cut 1.5cm strips away from the sausage meat along the length of the pastry. Fold in the ends and then alternate strips of the pastry up and over the sausage meat, crossing over each other neatly. Trim the excess pastry and brush with egg. Bake for 40 minutes until crisp and golden.
4. Serve warm or cold, cut into slices.
