Lou’s Chocolate Brownies

Since joining our team at the beginning of the month, Louise has been treating us to lots of goodies that she has been baking in her beloved Aga, we all agree that the chocolate brownies are our favourite….so far!

Here is Lou’s Chocolate Brownie recipe:    

Double Chocolate Chunk Brownies …enjoy these as they are or serve warm with hot chocolate sauce and vanilla ice cream.                           

Makes 16

1 x 100g bar dark chocolate, broken into pieces                                                                                                                                                Brownies

110g soft butter

200g light muscovado sugar

2 large eggs, lightly beaten

110g plain flour

100g white chocolate, chopped

75g cherries

 

1. Preheat oven to 180 C, fan 160 C, gas 4. Melt the dark chocolate in a mixing bowl over a pan of barely simmering water, making sure the bowl doesn’t touch the water. Once melted, leave off the heat to cool a little.

2. Put the butter and sugar in a large mixing bowl and beat with an electric hand whisk for a couple of minutes or until the mixture is the texture of coarse breadcrumbs.

3. Add the beaten eggs, little by little, beating all the time. Sift in the flour and add the slightly cooled melted dark chocolate, the chopped white chocolate and the cherries. Gently fold everything together.

4. Tip the mixture into a 2.5cm deep 20cm square tin lined with non-stick baking paper. Spread it out and bake on the centre shelf of the oven for 25 minutes. Leave to cool in the tin, then remove and cut into 16 squares.
